Use “Extract selected pages” when you need one new document — a single chapter, a form from a larger pack, or just the pages relevant to one person. Use “Split every page” when each page should become its own file, such as separating a batch of scanned receipts or invoices that were scanned into one long PDF; you'll get a tidy ZIP with one PDF per page.
